Kitchens Corner BBQ continuously sells 600 pounds of meat within just 2 hours, earning them a line extends down the street. Chef David Lee (AKA The PitMaster) is dedicated to maintaining his reputation of supplying “food for the soul”. When opening his smoker, Chef Lee unveils a mouth-watering selection of smoked ribs, juicy brisket, and beef dinosaur ribs, some of which have been smoking for 16 hours! However, the road to the top has not always been smooth sailing for Chef Lee. He explains how he’s navigated the hardships he’s faced along the way.
What inspired you to get into foodservice?
“I’ve always had such a love for the food service industry; that’s what’s always motivated me to be in it. I love how food and beverage can bring people together from all walks of life.”
What do you love about your business?
“The thing I love most about my business is watching people come and stand in line to wait for some great BBQ with strangers and end up leaving with great friends. I love the look on their faces as they finally get to the front of the line and the enjoyment from that first bite.”
What’s the most interesting thing to happen to your business?
“The most interesting of recent has been us going viral and gaining the level of attraction that we’ve been gaining!”
What is the biggest challenge you’ve had to overcome?
“The biggest challenge that I’ve overcome has been losing my last business and having to completely start over from scratch. It’s been rewarding and satisfying watching the business grow and grow when just two months ago I was almost homeless again.”
Which Cambro products help make your business work?
“We use Cambros warming hot boxes. When you cook over 100 slabs of ribs and 25 briskets off of a bbq trailer per day, you need something portable that you can keep your food hot in. Cambro allow us to do that!”
