California may be better known for the kale than BBQ fame but if you’re ever down Escondido way (near San Diego that is), see Pete Peterson and the folks at Screaming Pete’s BBQ Catering Company. As Pitmaster, Pete was inspired to get into the foodservice business by his love of cooking for big crowds.
“I got into comp BBQ events and then stated my BBQ catering company.”
What does he love most about his business?
“Taking simple meats and making them great. Creating side dishes that compliment my BBQ.”
What has been the most interesting thing to happen to Screaming Pete’s?
“Having people look me up and come to my home looking for my BBQ,” – that is in the realm of stalking behavior and it says something about the addictive nature of the BBQ. “Also, people ordering pans of my cheesy hash browns with Hatch chilies to go or pick up.” That sounds like a winning combination.
What is the biggest business challenge Pete has had to overcome?
“Still growing, but I would say it has a lot to do with how professional I handle my business and food handling.”
What Cambro products help Pete’s keep on Screaming?
“The Cambro 400 [UPC400], Big Squares [best name we’ve heard for them], full and half-size pans that you can cook and serve in.”
