Is there a segment of foodservice with better business names than BBQ caterers? If there is, we haven’t found it yet.

Desperados Barbeque & Catering Company from Angola, NY is the Cambro Featured FoodService Business of the Week! Their motto: “Barbecue so good it outta be outlawed.”

You know your food is good with that kind of line. Shelly Hunt, Desperados’ President, nominated the upstate New York eatery.

What inspired Shelly to get into foodservice?
[I] worked at Marco Beach Hotel at 17. Was mesmerized as to the vast organization of such an operation. From ice sculptures, to silver service, banquets, rooms service, pastry making, all operations were servicing two hotel towers, several beachfront cottages along with three pool areas, several bars, restaurants, etc….it was fascinating !

What does she love about Desperados (besides the great barbecue)?
Pleasing people during their celebrations, negotiations and tribulations.

As far as the coolest/most interesting/oddest thing to happen to Desperados, Shelly has her pick:
1. Growing 30% a year is pretty cool. Dang right it is!
2. Catering backstage for Uncle Kracker, Clay Walker and The Guess Who has been fun too!

What was the biggest business challenge Desperados overcame?
Definitely remodeling a late 1800 building about to be condemned….A close second has to be developing a restaurant that also provides concessions, catering and participates in bbq competitions. It’s like having four businesses.
