4 Ways Shrimp Shack Operates a Cleaner, Smarter Kitchen with Cambro

For Shrimp Shack co-owner and founder Fred Abosini, finding a better way to organize the restaurant’s back of house started with a simple problem: wire shelving wasn’t holding up. Today, Cambro products are used throughout Shrimp Shack’s operations, from coolers and freezers to the dish area, wall storage and food storage. There are four ways the restaurant has created a cleaner, more organized and easier-to-maintain operation.

1. Replace Rust-Prone Wire Shelving with Easier-to-Clean Storage

Since they opened their doors, wire shelving was simply all they knew at Shrimp Shack, but in a restaurant environment where moisture is unavoidable, particularly in coolers and dish areas, the shelving became difficult to maintain.

“[Wire shelves] rust easily, they don’t hold up, the quality sucks,” said Abosini.

The first major Camshelving transformation happened in the cooler at their Orange Park location, and it made such an impression that Abosini called it a “game changer.”

“When we were introduced to the Cambro, it was like, ‘Wow, where’s this been our whole lives?’ This is the way to go, and if you don’t go that way, then you’re missing out,” said Abosini.

Camshelving is easy to adjust and remove, allowing the Shrimp Shack team to clean them more thoroughly.

“We’re taking off the [shelves]…throw them in the dishwasher, bring them back out, put them back on…easy to maintain,” said Abosini.

With wire shelving, once you’d set it up, most operators don’t take it apart again until it’s time to throw it away. In contrast, Abosini appreciated the flexibility of Camshelving.


“[Camshelving is] easy to assemble, easy to adjust. It’s so simple compared to wire shelving, where wire…you got the clips and you gotta undo them and it’s hard, you know, it’s not easy. 
The Cambro shelving is so much easier to install and move them around…any given time you need to change them. Just rubber a mallet, boom, boom, boom. You’re done,” said Abosini.

After installing Camshelving in their first location in February 2026, just six months later they utilized it in the transformation of their second location.

“We did full blown everything Cambro shelving from front end to cook line to dry storage cooler, freezer, dish area, everything,” said Abosini.

2. Make Wall Storage Work Harder and Stay Cleaner

There was no efficient way to dry food storage lids so they were haphazardly put inside perforated bus pans after washing.

“We have a big pet peeve about keeping everything clean and the wire shelving was very difficult to do that, especially the wire shelving in the dish pit area; it would start rusting…and you just got to keep buying them. [The Cambro wall shelving] is a one time buy, and you’re good to go,” said Abosini.

Designed with the same materials as Cambro’s Elements XTRA Series, Elevation Wall Shelving shelf plates can be easily lifted off, wiped clean with a cloth or run through a dish washer. Plus, there are a variety of accessories available to support hygienic drying and organization. 

“The drying racks now make it easy. The dishwasher just sticks them up there, keeps it organized,” said Abosini.

In addition to the dish area, Abosini installed Elevation Wall Shelving over a prep area to store large jugs of condiments.

“Two gallons of sauces [on the wall shelving] and we put the fencing around it to where it’s safer, doesn’t fall off, which is a great option to have,” said Abosini.

“The weight limit is great on them. I have a lot of sauce gallons and stuff on there, and the weight doesn’t even budge, doesn’t bend; it’s very good and solid.”

3. Simplify Food Storage With CamSquares FreshPro

Cambro CamSquares FreshProShrimp Shack was already using Cambro food storage containers, but the restaurant’s transition to CamSquares® FreshPro brought another major simplification: one lid.

Previously, the team had to manage multiple types of lids for round and square containers. With CamSquares FreshPro, they can streamline their system while making containers easier to stack.

“Now, I only have to carry one lid, I don’t have to carry multiple lids, and they’re so easy to stack,” said Abosini. “I was using some, but now everything that I use are Cambro containers.”

“I tell everybody that I know that’s in the business now, I tell them, ‘This is the way to go with this Cambro stuff’,” said Abosini.
