Cambro’s Business of the Week: Pastry Atelier PQ

White wedding cakeWhen you look at the incredible creations PQ Fung makes for her clients, it’s hard to believe Pastry Atelier PQ started out of a pandemic passion project just a few years ago. Inspired by her Asian culture, Pastry Atelier specializes in exquisite wedding cakes and desserts like macarons and cream puffs. In fact, 90 percent of what they make are wedding cakes and dessert tables. Fung explains how her Cambro GoBoxes help keep her delicate items safe during transport. 

What inspired you to get into foodservice?

“I’ve always loved making food and sharing with others. From a young age, my parents entertained friends and family with the best food spread, so when I got older, I decided to do the same via desserts and pastries. Paying homage to my culture and my training, I was able to bring different flavors into modern and classic techniques.”

What do you love about your business?

“I love meeting new people and seeing the joy in their faces when they eat something I create. It is an extension of who I am and I put a lot of thought and love in everything I create. Running my business has helped me build my own community of clients who turned friends, internet friends into friends in real life, and meeting other business owners to share all our experiences.”

What's the coolest thing to happen to your business?

“The coolest thing to happen to my business is to see that it went from a Covid passion project, into a full on home bakery that plays a part in so many celebrations, especially weddings.”

What was the biggest business challenge you have overcome?

“Imposter syndrome and keeping up with demand while maintaining quality. I was saying ‘yes’ to everything because I was scared to say ‘no,’ and then I found out I wasn’t putting out my best work and it was unfair to my clients. After I decided to do what I was proud of or wanted to actually make, the quality started to really soar.”

Which Cambro products help support your business?

“I can’t live without any of my Cambro products, but especially the Cambro containers for literally all my mis en place and my Cambro GoBox with the Camchillers. I deliver anywhere between 15 minutes to 4 hours, and having the Cambro box to safely store my cakes and desserts take the stress off of me. I know the desserts stay cold and safe, but I also save money on singular use boxes because I can store the desserts on sheet trays instead.”
