How this Bakery Rises to the Occasion with Camshelving

Every day, Sullivan Street Bakery produces up to 17,000 loaves of bread and hamburger buns in their factory in Miami, Florida. With production running between 14 to 16 hours, high-quality, dependable equipment is necessary to maintain efficiency.

“In foodservice and in food manufacturing, sanitation should be at the forefront; the one thing that people tend to overlook sometimes is racks and things that we use in our process that can’t get contaminated and can’t get dirty,” said Gonzalo Radìo, COO of Sullivan Street Bakery.

“In the past, and what most people use in the industry are [wire] racks, which they’re very versatile and they’re very useful, but cleaning them is a pain. It really becomes a nuisance within your production when you have these racks and you start to implement these deep cleanings that take time, take effort and take money to be able to get the surfaces in the condition or in the sanitation that you need them.” 

Radìo had previously used Camshelving® while working for an empanada manufacturing company and after growing tired of the wire racks at Sullivan Street Bakery, he set his sights on replacing them with the Camshelving. Unlike wire shelving, Camshelving comes with a lifetime guarantee against rust and corrosion and is designed with easy-to-remove shelf plates. 

“What I’ve always loved about Cambro is the fact that you can grab these racks, bring them into your washroom, pull apart the shelves, throw them through our sanitation machines or hand wash them and you’re able to fully sanitize all the food contact surfaces on the rack,” said Radìo.

After the bread has been baked, loaves are loaded onto Camshelving to cool. 

“Cambro racks are perfect for this process. It allows the product to breathe due to the shelves being open and allows air to circulate through the product, which is needed to be able to cool down the product for slicing purposes,” said Radìo. “We’ve been able to control the small space that we have dedicated to this process and it allows us to fit all of our product.”

With Camshelving, Radìo and his team established a cleaning schedule that is quick and easy. 

“I did a lot of research in the market, and Cambro is really the only company that I found that kind of fits these processes to a T,” said Radìo.

For the hamburger buns, Radìo relies on the Ultimate Sheet Pan Rack, which is made from the same durable and rust-free material as Elements® XTRA Series. 

“You have to keep in mind that in production, [the Ultimate Sheet Pan Racks] are getting anywhere from 8 to 13 hours of use a day; every single day into process. The durability of it is phenomenal,” said Radìo.

“As I’m weeding out some of our old racks and old speed racks and things like that, we’re replacing them with Cambro.”

Sullivan Street Bakery provides baked goods to luxury hotels like Loews, Fontainebleau and Rosen Shingle Creek, high-end restaurants and local supermarkets in parts of South Florida, Central Florida and Tampa.
