Business of the Week: Another Broken Egg

Who doesn’t love brunch? With more than 80 locations in 15 states, plus nearly 20 more in the works, Another Broken Egg is an award-winning, daytime-only restaurant that leads the next generation of brunch concepts. Timothy Wood, general manager at their Lake Mary, Fla., location credits Chef Jason Knoll with creating incredible food that brings people for more.

What makes Another Broken Egg different?

“What separates another broken egg from other brands I believe is our commitment to celebrate indulgence. We give you the okay to drink; it’s okay to have a cocktail in the morning. You can’t drink all day if you don’t start in the morning.

I think it goes back to our chef-inspired menu; the food’s incredible. The customer experience is number one and it’s hard to beat a great lobster and brie omelet.”

What are some of your success metrics?

“Some of the factors that measure our business obviously would be profitability. Without profits, you can’t continue to have a great business. Along with that, control of productivity, food waste, labor—all those things tie into making a successful restaurant.”

How did COVID impact your restaurant?

“Some of the factors that have impacted us probably more than anything was COVID, as we all felt the struggle. We went from being open 100% percent to being closed for just takeout. That’s something that we struggled with and I think we overcame that. So, now since the COVID, we’ve come back super strong and our sales, takeout and delivery, are up as a brand.”

What changes have you implemented since COVID?

“Some of the changes, especially since COVID, has been the amount of takeout. Before, we typically didn’t do a whole lot of takeout or delivery. The consumer model now seems to be going towards the delivery sector and that’s something that we are striving to become number one in the brand.

What’s your favorite menu item?

“My favorite menu item has to be the shrimp and grits. It is a slightly spicy, low country reduction sauce with gorgeously sauteed shrimp over our creamy grit.”

What’s in the future for your restaurant?

“The franchise market is exploding right now. I think we’re considered in the top 10 in the industry and on a corporate side, we’re looking to expand every year. Look for us in your local neighborhood.”
