Every rush begins in the walk-in, but at Bosscat Kitchen & Libations in Irvine, that first stop had become a daily headache. Chef Corey Muir and Director of Culinary Peter Petro were contending with sagging wire shelves, missing sleeves, and the occasional sauce crashing to the floor, mostly due to rusty shelving.
