Have you ever craved a freshly baked cookie at 10pm but had no way to get it? Gage Lang, owner of Breaüxdoo Bakery, has solved nighttime dessert cravings for the people of Spokane, Wash. Opening at the end of May during the thick of the coronavirus pandemic, Lang has found sweet success at a time when many foodservice businesses are closing.
What inspired you to get into foodservice?
“I have been passionate about cooking and baking since being a child. My mom owned a catering business and always worked in the hospitality industry and my stepmom was one of the greatest bakers I know. I was surrounded by powerhouse women who made incredible food and that translated over to me!”
What do you love about your business?
“I love the creative freedom to bring incredible desserts with a fun twist to our local community. We deliver baked goods until 12am to 1am in the morning. I have customers who order whole cakes after midnight…THOSE ARE MY PEOPLE!”
What does “Breaüxdoo” mean?
“When we had the idea of coming up with this bakery, the long-term vision was to offer espresso and baked goods. It rhymes with voodoo – so brew which we have spelt ‘breaü’ from ‘brewing’ coffee and doo because I wanted the brand to have a punk rock feel to it like a tattoo shop or some grunge rock show.”
What is the biggest challenge you’ve had to overcome?
“Having a grand opening in the middle of a national pandemic. I had been planning to open for months and it just so happened to land us in this crazy time. Towards the beginning, nobody really knew what was going on, so it was much more unpredictable at the time with so many restaurants and bars closing. We do late night dessert delivery, so our business model has kept us going and people have been loving it! The most challenging part is creating food that is stellar and made by talented and knowledgeable pastry chefs, but also having the fuel to have enough driving power to get the goods to where they need to go. It eats up your margins quickly if you are not busy and we have made it work so far! Very thankful!”
