Four months after opening the doors of The Simple Greek in Fullerton, Calif., Vineet and Vandana Unadkat were thrown a curve ball no one saw coming: the Coronavirus pandemic. Although the couple’s location hadn’t been open long, their customers and community rallied behind them. With a modest, clean menu primarily consisting of pitas and bowls, The Simple Greek provides light dishes full of Mediterranean flavor. Vandana shares more of their story:

What inspired you to get into foodservice?

My husband’s, Vineet, passion to open up a unique concept and my passion of food and serving our community. This we thought to be the best industry where we could be involved in serving our community and fulfill our indulgence of food.

What do you love about your business?

Customer connection and community involvement. We provide healthy options to our community and ensure that every interaction we make with our customers brings them back to the restaurant to eat healthy Greek food. We interact with a lot of different people and everyone has one thing in common, healthy food.

What’s the most interesting thing to happen to your business?

Through these unprecedented times, we have been able to remain open and serve our community. We have managed to continue serving our community through these tough times and I would like to thank my employees, my community, and most importantly our customers who helped us to continue remain open.

What is the biggest challenge you’ve had to overcome?

COVID 19! There was a time where we were almost about to shut down. [We were] only open for four months and things started to become very hard. But, with the help of our community and our customers, we fought back and remained open and continue to remain open to serve.

Community outreach programs, city programs and serving schools helped us to remain open. We would like to take this opportunity to thank our employees, our community and most importantly our customers who helped us to overcome the challenge that is still hanging on top of our heads, but we continue to fight.

We use only Cambro products to deliver hot/cold items to our customers. It is now more critical than ever to ensure that we use these big Cambros [GoBoxes] to deliver items safely and securely.
