Since 2018, Vancouver-based The Rooted Table, a catering and meal prep company, has been delighting the community with vibrant, seasonal dishes crafted from locally sourced ingredients. Founder and CEO Hilary Brent now shares her insights into the company’s culinary vision.
What inspired you to get into foodservice?
“I have always been in love with food — the colours, the makers, the stories, the way it brings people together and pulls us into the present. For me, food is a form of creative expression and deep care for those around me. It’s a way to connect with nature, with each other, and ultimately, with ourselves. Creating a business around the simple beauty of food felt like a natural path and the most impactful way I could service others and contribute to a better world.”

What do you love about your business?
Hilary loves that The Rooted Table embodies her core values of creativity, community, and care. She finds joy in supporting local growers, nourishing people, and fostering a vibrant, joyful team environment. Every day presents fresh challenges and opportunities for growth, continually making her a better person.

What’s the coolest thing to happen to your business?
A standout moment for The Rooted Table was participating in the Battle of the Chefs event hosted by a prominent global tech company. Competing against top culinary talent, they served 200 guests breakfast, lunch, and happy hour with their signature vibrant, seasonal dishes and bold flavors.
“We won by a landslide vote, locking in a long term contract with the company and it proved to us that food that feels good, looks beautiful, and brings people together is valued by so many. That win was more than just a title — it was proof that heart-led, intentional small food businesses can compete with the best of the best.”
What was the biggest business challenge you overcame?
Hilary recalls a particularly memorable event when her team arrived at a large catering gig only to realize they had forgotten the main course. Although the meal faced a slight delay, they successfully navigated the challenge.
“Since then, every pack list gets double checked before leaving the kitchen :)”
