
What inspired you to get into foodservice?
“I actually got back into foodservice after about a 20-year white collar career. Why? Because I love cooking and serving people and I thought that I had an incredible opportunity to do something nobody else was doing in my area.
Being from South Carolina eating barbecue has always been a part of my life, but I never knew how to cook it well until I created City Limits.”
2. What do you love about your business?
“Although food and labor costs are very important to any restaurant, I love that what I’ve created is driven by executing the best bite we can, not necessarily the most profitable bite.”
3. What’s the most interesting thing to happen to your business?
“Although we will eventually add more service hours, we figured out how to survive in a very challenging economy only being open nine hours a week. That in turn gives me more time to more closely oversee every aspect of our operations and to maintain quality standards.”
4. How did it feel to be named a James Beard Best Chef Southeast Finalist this year?
“Since creating City Limits back in 2015, our goal has always been excellence. We’ve been blessed with the ability to consistently execute our vision at that high-level.
James Beard embodies culinary excellence. In our sub-genre of BBQ, we set ourselves apart from most other barbecue joints because not only are we only cooking with wood, we are also making our sides and accoutrements from scratch.
When a writer comes by for some food, I think they see the energy, the vibe and our passion for what we do and it makes for a great story. Plus, the food is really good.”
5. Which Cambro products help make your business work?
“All of the containers! Because of fridge space limitations (no walk-in cooler) we have a system that uses 4, 6, 8 and 12 quart containers for all our sauces, pickles, etc. I can’t wait to get a walk-in and some of your walk-in racks.”
City Limits also uses our Camtrays to serve their BBQ and shakers to season their meat.
