
Brining chicken is a simple yet transformative technique that infuses the meat with moisture and flavor, ensuring each bite is tender and juicy. By soaking chicken in a saltwater solution, the process allows the meat to absorb both water and seasoning, which helps prevent dryness and enhances taste.
At Noble Bird Rotisserie in Long Beach, Calif., chicken is the name of the game; to keep up with demand, they have about 800 lbs. of chicken brining at a time in our Soak and Brine Tanks. Each tank holds 48 chickens at a time, ranging from 3.5 to 4.25 lbs.
“[The Soak and Brine Tanks] have been durable. The brine has a high salt content in it and the product has outlived my expectations because saltwater is usually death on anything and they’ve continued to perform remarkably,” said Ricky Ortega, General Manager at Noble Bird.
Previously, Ortega brined their chicken in big polycarbonate containers and set them on top of shelving.
“The saltwater just started eating away and rusting the casters…and eating the aluminum [shelving]. Then we moved to stainless, and it was just really tearing through any of the metals or alloys of the racks and then it couldn’t handle [the weight],” said Ortega.
Made from reinforced polyethylene, the Soak and Brine Tank is inherently resistant to all salts and is NSF listed. With a 37-gallon capacity and heavy-duty casters for easy maneuvering, our mobile tank is designed to simplify all soaking, brining and marinating needs.
When Noble Bird takes out their chicken and prepares a new batch, they can use the tank’s faucet and optional hose hookup to drain their them completely within 4 minutes.
“[The Soak and Brine Tanks] make it really easy to drain the brine water,” said Ortega.
