Cambro’s Business of the Week: Pizzaa Boss

Chef making pizza

When Fra Cirillo’s wife, Katherine, bought him a pizza oven to give him something fun to do during the pandemic, it sparked his passion for pizza. He took it seriously and learned how to perfect the art of being a pizzaiolo. Two years later, he opened Pizzaa Boss. Using flour imported directly from Italy, Cirillo’s dough is handcrafted and goes through a minimum 48-house fermentation process. The best part? Cirillo brings the authenticity of gourmet Neapolitan-style pizza directly to his customers’ backyards!

What inspired you to get into foodservice?

“At a young age, watching my family members cook, I was captivated by the art of cooking. I really started cooking in my mid 20s and once I got married, cooking for my wife made it more passionate for me because my creations evoked joy and delight.”

What do you love about your business?

“There is immense joy in baking pizza in people’s backyards; it offers them a unique experience, allowing them to witness the entire pizza making process right in the comfort of their own home. Our goal is to create unforgettable moments with our delicious pizza!”

What's the coolest thing to happen to your business?

“Pizza Boss derived from a pandemic hobby! I developed a passion for pizza making during COVID-19 when my wife, Katherine, bought me my first pizza oven. I had no professional culinary background and I dedicated two years learning the craft of pizza making before creating a business.”

What was the biggest business challenge you have overcome?

“The biggest challenge was actually believing in myself and overcoming the trial and errors of dough making. It took me two years to be confident enough to test the waters. I would have never imagined creating a business in my lifetime, so starting one was a nerve-racking challenge, not knowing what the outcome would be.”

Which Cambro products help make your business work?

“Cambro products are essential in all aspects of our business. From the dough making process to the ingredient storage for baking and transporting. We use all of the large round storage containers for bulk fermentation of our dough as well as the smaller round storage containers for storing ingredients such as mozzarella, tomato sauce and other toppings!
