This Restaurant’s Secret to Catering Hot, Crispy Chicken

The perfect rotisserie chicken has crispy skin with juicy meat underneath, and no one knows this better than Noble Bird Rotisserie in Long Beach, Calif. Dedicated to high-quality ingredients, the chicken at Noble Bird is pasture-raised in Temecula, Calif., without hormones or antibiotics.

Considering Noble Bird goes through the trouble of ensuring their chicken is grown in the best conditions, they want to ensure it arrives in optimal condition when it’s delivered to their customers for catering.

Previously, Ricky Ortega, General Manager at Noble Bird, transported their chicken in coolers with heating pads, hoping it would stay as hot as possible until the event started.

When Ortega found out about the new PCU1600 (Pro Cart Ultra® Pan Carriers) from Cambro, he decided to give it a try. 

“The [Pro Carts] had the honor of being on board the USS Iowa now three times. It’s a decommissioned, museum ship, one of the Iowa class battleships in San Pedro Harbor. It’s pretty rad,” said Ortega. “Now, we can serve hot food at any time, whenever, anywhere.”

Not only is the Pro Cart Ultra Pan Carrier able to maintain the quality of the meat, but it’s also able to maintain the temperature. When plugged in, Pro Cart Ultra Pan Carriers heat up from room temperature to 165˚ F (73,9˚ C) in 15 minutes, and only take 20 seconds to recover after losing temperature. When unplugged, thick polyurethane insulation holds hot temperatures for at least 4 hours without electricity.

While the Pro Cart Ultra Pan Carrier is a huge improvement from the coolers Ortega used for catering previously, he was also curious how it would perform compared to the CVAP they use inside the restaurant.

“After we rotisserie the chicken, we need to hold it, the temperature and the humidity,” said Ortega. “With our proteins, what’s super cool is that I’ve been able to do that offsite and, in the restaurant, [with the Pro Cart Ultra Pan Carrier].

The CVAP is designed to control temperature and humidity, but it takes up a lot of space, doesn’t have mobility and must be connected to a water line.

“I prefer the [Pro Carts] for our purposes. The casters are fantastic on the newer models,” said Ortega. “The Cambro [unit] is really engineered to move and be durable.”  

Ortega was so happy with the Pro Cart Ultra Pan Carrier than he purchased two more to help with food transportation to additional soon-to-open locations.
