Use Camshelving to Unlock Your Kitchen Storage Potential

When building your back of house, Camshelving is the foundation. Oftentimes, chefs are so excited to be done with metal shelving that they think their decisions end there. With Camshelving, there are a variety of complimentary products and accessories that can make your space more organized and efficient.

Empty shelving unitNik Bautista, Director of Culinary Services at Banner Baywood Medical Center in Mesa, Ariz., has 3 walk-ins, 2 freezers and a dry storage room that help support $4.5 million in revenue per year.

Bautista was thrilled to get rid of the metal shelving in his food storage areas in favor of Camshelving.

“My biggest thing is the organizational aspect and the cleanliness. [Camshelving] is second to none,” said Bautista.

“If you walk into a walk in that has wire racks with fuzzies and blood and just everything everywhere, [the health inspector] is going to start digging around and wondering, ‘What else can I find in here?’ But if you walk into a dry storage or a walk in that’s obviously very clean—because [Camshelving is] so easy to clean—it just looks nice and bright and organized.”

After Bautista selected Camshelving Elements® XTRA, he asked his local Cambro sales rep if there were any additional Cambro products that could make his space more organized and efficient.

Bautista’s local Cambro sales rep had 3 product suggestions that made significant changes.

If you look in your kitchen and you see food pans stacked on sheet pans sitting on a sheet pan rack, you’re doing it wrong. Sheet pans belong on an Ultimate Sheet Pan Rack, which will never rust or corrode and is equipped with casters that glide smoothly around the kitchen. Food pans belong in a Food Pan Trolley, which saves storage space because it is designed specifically for food pans. (Plus, it won’t rust or corrode either!)

“We used to love dishes around here. It was just anything you could put on a sheet pan, just fit it on there. Sometimes we would have a hotel pan on a sheet pan, but it was cocked sideways to get it on there. It was not ideal to say the least,” said Bautista. “It’s definitely a labor saver…not having to wash 50 million sheet pans and hotel pans when you don’t have to.”

Something we see all too often is hotel pans covered in plastic wrap stacked on top of each other. The Universal Storage Rack allows pans to be safely and efficiently stored on shelves, with easy access to each pan.

“Anybody that has worked in a kitchen knows that when people stack hotel pans on other hotel pans, it’s almost impossible to get to the other one. You have to move all these other ones, but now being able to just slide them in and out and having the labels on the outside. It’s just so much easier,” said Bautista.

“The first time I saw a flyer for it, I was like, ‘I have to have that.”

After his kitchen was overhauled, Bautista noticed his lack of organization was the problem, not the size of his storage spaces.

“When you go in there, if you were to see it before and after, everything was tightly crammed in there. Now it’s like, what else can we put in here? There’s just so much space,” said Bautista.

With metal shelving, there is virtually no flexibility. But with Camshelving, there are a variety of adjustments you can make that are both easy and effective. Contact your local Cambro sales rep today to learn about the solutions available for your kitchen.
